SMF Street Tacos

 
 

These juicy and flavorful pork tacos made from Sweet Mercy Farms’ Pork London Broil cut from the round and using our YeeHaw! Spice Rub, will take you back to your favorite taco cart in Puerto Vallarta. ¡Si! ¡Pues Claro!

1 lb Pork London Broil
1 - 2 TBS Yeehaw Spice Rub
1 TBS rendered lard
1/2 small onion - diced
1 bunch cilantro – destemmed and chopped
Limes cut in 1/8
Small Corn tortillas

Slice thawed Pork London Broil in very thin strips (1/16”), against the grain
Marinate the strips in 1 – 2 TBS of Spicy YeeHaw Rub depending upon desired heat for about 4 hours.
After marinating, take the strips and further cut them into bite sized pieces
Heat 1TBS rendered lard in skillet over med-high heat
Over med-high heat, quickly cook the pork until no pink shows. Do not overcook. This should take less than 10 minutes.

Warm corn tortillas. Use 2 tortillas per taco for these juicy beauties. Serve the warm pork onto the tortillas. Garnish with diced onion, chopped fresh cilantro and a hearty squeeze of lime.
