Biscuits & Green Chile Sausage Gravy

 
 

New Mexican Comfort food with Green Chile Sausage smothering fresh-out-of-the-oven biscuits. What can be better for out-of-town-guests or a lazy Saturday morning!

1 pound Green Chile Sausage
3 TBS Lard, bacon grease or butter
1/4 cup flour
4 cups milk
Salt and pepper
1 dozen biscuits  

Brown the Green Chile Sausage in a large skillet, breaking it up as you cook it.
Add 3 TBS rendered lard or bacon grease or butter. This combined with the fat from the sausage should equal approximately 1/4 cup.
Add 1/4  cup of flour to make a rue. I don’t find it necessary to remove the sausage. Just brown the flour with the fat and the sausage until it’s a lovely golden brown.
Whisk in 3 cups of milk and use the 4th cup to reach your desired consistency. It should not be too thick because it thickens once it’s served. I almost always use at least 4 cups of milk.
Salt and pepper to taste. Crack a liberal amount of fresh pepper in the gravy and don’t forget the salt. It’s important!

Split each biscuit in half horizontally and smother with gravy. Mmmm-Mmmm.
